Avocado Shrimp Tostadas with Chipotle Crema

Hello hello, mis amigos bonitos!

Wow guys, school has started, and I am insanely tired. I wake up, drive, get on the train, get on the bus, go to school, get on the bus, get on the train (which I am on as I write this), drive home, and finally, SLEEP. My life is so hard, honestly. (Note that I do not include homework, because who does that?) But serious issue: when am I supposed to blog!? Before blogging, when am I supposed to make food to blog about!? UGH SCHOOL. I don’t think you’re going to be seeing much of me until Thanksgiving break, or maybe even Christmas break? Sigh. Wait wait hang on, back to school: today I found the quiet section of library oh my god it was so nice to study there! Okay back to what I was saying.

Wait I was still talking about school? What is my writing? How can any of you read this? (I love you all, my readers.) Since this only the first week of school, I still have a little time! Also, I had avocados, and eating avocados when they are ripe is of the utmost priority, considering they are perfect for like, four seconds of their lifespans, so obviously, I made Avocado Shrimp tostadas! Well technically I did a couple weeks ago. Oops.    Continue reading “Avocado Shrimp Tostadas with Chipotle Crema”

Quinoa Stuffed Bell Peppers

I don’t do a lot of real food recipes, and I’m pretty sure I haven’t done any healthy ones either…. No wait, I did Bell Pepper Quinoa Salad. That’s healthy! Yes! I’m not a failure!  Continue reading “Quinoa Stuffed Bell Peppers”

Pasta Salad: Labor Day BBQ

So it’s Labor Day! (Well. It was.) Barbecue time! Whoo! That means it is time for all the favorites! Hot dogs! Burgers! Potato Salad! (Do not even get me started on my feelings about potato salad. Bad idea.) Guacamole! Seven Layer Dip! (coming soon) Pasta Salad! S’mores!!! (I don’t think normal people have s’mores at bbq’s but I really don’t care.) Too much good stuff. Ahh. My madre (I don’t know why I call her madre lol) taught me how to make Pasta Salad today! It’s surprisingly simple, and really good. Continue reading “Pasta Salad: Labor Day BBQ”

Bell Pepper Quinoa Salad

This is a really simple recipe that works well as a side dish with things like fish. (Seriously, it’s so easy that I made it perfectly on my first try. So it’s pretty easy.)

  • 1 cup quinoa
  • 1 small cucumber
  • 1 bell pepper
  • 1 tsp lemon juice
  • Salt and pepper to taste

Put the quinoa in a pan, rinse it, and then boil with two cups of water. As soon as it starts boiling, reduce the heat, stir, and cover for 15 min. Once all of the water is gone, turn off the heat and let cool. (I don’t know if different brands of quinoa are cooked differently, so check the instructions on the bag before doing anything.)
Dice the cucumber and bell pepper. Once the cooked quinoa has completely cooled, mix in the cucumbers and bell pepper. Add the lemon juice, mix and then add salt and pepper to taste.

Turkey Bacon, Guac, and Cheese Sandwich

So I hate sandwiches. Seriously. They are awful. That is, unless, they are good sandwiches. Continue reading “Turkey Bacon, Guac, and Cheese Sandwich”
