Sorry. (That’s a lie, I’m not sorry. I love cookies.) LOOK AT THE COOKIES!
I’m kind of in looove with this recipe because 1. It’s super easy 2. It’s super quick 3. It doesn’t require a mixer and 4. Have I mentioned the COOKIES!? The whole process takes about 45 minutes, and that’s only because it takes about 35 minutes to bake. That’s just 10 minutes of mixing and stuff! Whoohoo! They’re chewy and yummy and the M&M’s maintain some crunchiness and so yayyy!
Another awesome thing about this recipe is that it can be altered to include anything you want. It’s a basic blondie base (vanilla brownie, I guess, for those of you who are unfamiliar with the term). Just substitute the M&M’s and Oreos for anything… like pretzels, chocolate chips, your favorite candy bars, or marshmallows(?). I just might have to do this next….
Yield: One 9×13 pan (about 24 servings)
- 1 cup unsalted butter (2 sticks), melted
- 2 eggs
- 2 cups brown sugar, packed
- 1 tablespoon vanilla extract
- 2 cups all-purpose flour
- 36 Oreo Cookies (full, regular sized package), coarsely chopped (I used original but you can use any kind)
- About 1 cup M&Ms- or a little more because, why not? (any kind you like)
Preheat oven to 350°F. Line a 9×13 baking pan with aluminum foil and spray with cooking spray.
Add the melted butter to a large mixing bowl. Add the eggs, brown sugar, vanilla, and whisk until smooth. (Wait for a minute for the melted butter to cool before adding the eggs so they don’t scramble.) Add flour and stir until just combined, be careful not to overmix. Mix in the Oreos.
Evenly pour half the batter into the prepared pan and smooth it out with a spatula. Sprinkle half the M&Ms on top. Pour the rest of the batter on top and again smooth it out with a spatula. Evenly sprinkle the remaining M&Ms on top and gently press them into the batter with the spatula or your fingertips.
Bake for 35-37 minutes, or until a toothpick inserted in the center comes out clean/with few moist crumbs. Allow to cool for about 30 minutes before slicing and removing from pan.
Keeps up to 1 week in a airtight container.
