Bell Pepper Quinoa Salad


This is a really simple recipe that works well as a side dish with things like fish. (Seriously, it’s so easy that I made it perfectly on my first try. So it’s pretty easy.)

Ingredients:

  • 1 cup quinoa
  • 1 small cucumber
  • 1 bell pepper
  • 1 tsp lemon juice
  • Salt and pepper to taste

Directions:

Put the quinoa in a pan, rinse it, and then boil with two cups of water. As soon as it starts boiling, reduce the heat, stir, and cover for 15 min. Once all of the water is gone, turn off the heat and let cool. (I don’t know if different brands of quinoa are cooked differently, so check the instructions on the bag before doing anything.)
 
Dice the cucumber and bell pepper. Once the cooked quinoa has completely cooled, mix in the cucumbers and bell pepper. Add the lemon juice, mix and then add salt and pepper to taste.
